The first thing you need to know about A Platter Of Figs (Artisan, $35) is that David Tanis cooks six months each year at Chez Panisse and lives the other six months in Europe. He has written a relaxed, personal book about his life and cooking. I used the cookbook extensively for the Jewish High Holidays. My favorite recipes were the Green Lasagna with greens (admittedly, I did not make the pasta from scratch, as Mr. Tanis does) and Braised Beef (pot roast), both of which were big hits. The lasagna takes several steps but will feed eight people. The braised beef is a cinch to make, as are the Baked Apples. I plan to make the Chicken Tangine when our English cousins come; you can ask me how it turned out.
