Drawing on a wide range of culinary traditions, Andrés stays vegetable-focused while featuring dishes that include a variety of ingredients. Ranging from a simple lentil stew to the classic Spanish gazpacho to potatoes baked in fresh compost, Andrés serves up a rich selection of recipes along with tips and suggestions that will change both how we eat vegetables and how we think about them.
