The author of two IACP Award-winning books, Bread Alone and Local Breads, Leader, owner of the world-famous Bread Alone bakery in Boiceville, New York, has revolutionized American artisan bread baking. In his new book he offers a comprehensive look at the art and science of this increasingly popular practice, using stories, travel experiences, and photos to illustrate everything from wheat farming practices and advances in milling to sourdough starters and the mechanics of mixing dough. The proof, of course, lies in the bread, and Leader features sixty recipes, putting new twists on classics like curry tomato ciabatta, vegan brioche, and chocolate sourdough babka.
